This was a fun thing. We sat and watched a chef make “seafood pouches”, basically a blin pouch enclosing chunks of sturgeon with vegetables and spices. It’s better than it sounds in this description. Really. Then abalone. Then sturgeon again. Tasty, and even better – they served a separate wine with each course!
